Simon Whitley joined the prestigious property in summer 2014, bringing with him almost 30 years of culinary expertise.
Inspired by Britain’s larder, Simon’s menus bring the best of seasonal produce to our tables, prepared with a cooking style that uses just a few carefully chosen, quality ingredients to enhance a dish’s flavour.
He has an expert knowledge of when local produce is at its most delicious, using beautiful native wild garlic in May, asparagus before the summer solstice, fruit from England’s orchard such as gooseberries, apricots and cherries in August, and lamb in the autumn when flavour has had time to develop. In late autumn, enjoy west-country game such as woodcock, pheasant and partridge, matched with traditional English fruit such as pears and apples.
Simon’s career reads like a who’s who list of some of the best restaurants and hotels in Britain, including Simpson’s in The Strand, St Andrews Golf and Spa hotel, Cameron House on Loch Lomond, Dover Street Arts Club, Home House and The Dorchester.
